Grass-Fed Beef

Imagine walking through the first gate at Rolling Hills Farm. Making sure you fasten the gate behind you, you look beyond the edge of the woods and can see the pasture stretching out over the next hill. You walk on and see the first group of cows with their calves. The cows and their calves are grazing on fresh grass and clover; as you get closer you can actually hear them tearing the grass as they eat. You realize the cows have unrestrained access to fresh air, grass, sunshine, and cool natural spring water. Then the group of cows across the hollow catches your attention. As you walk over, you can’t help but notice the unique smell of healthy soil. By utilizing rotational grazing practices the cows help rejuvenate the soil. Their manure provides tons of natural fertilizer. Their hooves are ideal for pushing dead growth into the ground so the microorganisms can convert this waste into fresh organic soil. The hooves also leave small indentions that allow rain water to pool and be absorbed into the ground, instead of running off. The organic soil can now hold up to 4 times the amount of moisture which is beneficial during drought periods. The rich, moist soil will produce the lush green grass that cows love. Then this sustainable cycle starts over. The cows, you notice, are young steers getting ready for finish. They are eating some of the most lush grass on the farm helping them gain their weight in a healthy way, as God intended. While walking back towards the barn you see the cows are now being moved to the next paddock….you hear Heidi calling

 “COOOOOOMMME COW", "COOOOOOMMME COW”. To your surprise the cows start mooing, and begin walking to her. As soon as they get to the new paddock they begin to stop and graze again. Heidi hooks up the mineral feeder and pulls it to the new paddock. When the feeder goes by you are curious about the odd green color inside, so you ask, and Heidi explains that it is kelp (yes, sea weed!) mixed with salt. This is the only supplement they need to stay healthy, and makes them so much healthier for your family. While walking back you begin to think about all you have seen, and are convinced, the cattle at Rolling Hills Farm is raised the way it was intended.
